Fish Eggs

That's eggs with fish, not eggs from fish. If you thought stuffed eggs couldn't go to a really smart party, these will change your mind.

Ingredients

6 hard-boiled eggs
2 tbsp mayonnaise
2 tbsp soured cream
50 g smoked salmon, well mashed
1 tbsp bottled, grated horseradish
2 tsp finely chopped sweet red onion
⅛ tsp salt


Method

1. Slice the eggs in half and carefully remove the yolks into a mixing bowl.


2. Mash the yolks with a fork. Stir in the mayonnaise, soured cream, salmon, horseradish, onion and salt and mix until creamy.


3. Spoon the mixture back into the hollows in the egg whites.

Yield:- 12 halves, each with a trace of carbohydrate, a trace of fibre and 3 grams of protein.
