Cauliflower with Beetroot Mayonnaise

Ingredients

1 head cauliflower
teaspoon fresh lemon juice
1 tiny beetroot (about 1 oz/30 g)
Salt to taste
1 pint (150 ml) mayonnaise (preferably home-made)
2 teaspoons prepared horseradish
Snipped dill

Method

Steam the whole head of cauliflower over boiling water for 10 minutes. Drain and chill thoroughly in the refrigerator.


Meanwhile, boil the beetroot until tender. Peel it and put it through a fine strainer. Mix together the sieved beetroot, the mayonnaise, horseradish, lemon juice and salt.


Just before serving, mask the chilled cauliflower with the beetroot mayonnaise, covering the top and sides. Garnish with freshly snipped dill, and cut into wedges to serve.

Note: Be sure not to overcook the cauliflower. It must remain firm.
