Macaroni and Cheese


1 lb ziti pasta; cooked/drained rinsed
4 tbs butter
cup fine dry bread crumbs
2 cups extra-sharp Cheddar cheese shredded
cup Parmesan cheese; grated
3 tbs all-purpose flour
3 cups milk
tsp salt
tsp pepper


Serves: 8


Preheat oven to 400 F. Grease a 13x9 baking dish. Place ziti in large bowl. In a medium saucepan, over medium heat, melt butter. Pour 1 Tablespoon into small bowl; add bread crumbs, ½ cup cheddar and ¼ cup parmesan. mix. Whisk flour into butter in pan. Cook 1 minute, whisking. Whisk in milk gradually. Heat to boiling, whisking occasionally. Simmer 2 minutes. Add remaining cheeses, the salt and pepper. Add to pasta; toss. Place in prepared dish; top with crumb mixture. Bake 25 minutes, until browned and bubbly.
