The best dried mushrooms are those that have been freshly gathered from the woods and fields. To dry them, simply wipe them off with a damp cloth to remove all traces of dirt; do not wash. Remove the stems and, if desired, peel the caps. If the weather is sunny, spread the mushrooms on brown paper and leave them to dry in the sunshine for 2 or 3 days, taking them in at night as soon as it begins to grow damp. The mushrooms should be covered with fine muslin to protect them from insects, and should be occasionally turned. Once they are dry, thread them on twine and hang them in the sun or in a well-ventilated room until they have dried out completely, at which time they may be transferred to jars and stored airtight.


If the weather is not sunny, the mushrooms may be spread on a screen and dried in a 60°C/140°F oven for several hours, until dry.

To reconstitute, soak the dried mushrooms in warm water to cover for at least 30 minutes, then drain and use as directed. The soaking liquid may be added to soups and stews.
