The natural texture of the honeydew melon is perfect for this delicate juice. For best results, make sure the melon is truly ripe.

250 g/9 oz honeydew melon
300 ml/10 fl oz sparkling mineral water
2 tbsp clear honey


Redcurrant clusters


Serves: 2


Cut the rind off the melon. Chop the melon into chunks, discarding any seeds.

Put into a food processor with the water and honey and process until smooth.

Pour into glasses and decorate with a cluster of redcurrants to set off the pale yellow.
