Tropical Fruit Punch
This exotic-looking cocktail is simplicity itself and can be varied with different fruit juices. Top with lavish amounts of fruit for a really festive effect and add ginger ale to make a great long drink.
1 small ripe mango
4 tbsp lime juice
1 tsp finely grated fresh ginger
1 tbsp light brown sugar
10 fl oz/300ml orange juice
10 fl oz/300ml pineapple juice
Orange, lime, pineapple and star fruit slices
Blend or process the mango with the lime juice, ginger and sugar until smooth.
Add the orange and pineapple juice and process again for a few seconds until smooth.
Divide the crushed ice between 6 glasses and pour the punch over. Dress with the fruit slices and serve at once.
