Serve as a main dish with rice, or use to stuff peppers or fill tacos.

30ml/2 tbsp olive or corn oil
900g/2lb minced beef
1 onion, finely chopped
2 garlic cloves, chopped
2 eating apples
450g/1lb tomatoes, peeled, seeded and chopped
2 or 3 drained pickled jalapeño chillies, seeded and chopped
65g/2½oz/scant ½ cup raisins
1.5ml/¼ tsp ground cinnamon
1.5ml/¼ tsp ground cumin
Salt and freshly ground black pepper
Tortilla chips, to serve

To garnish

15g/½oz/1 tbsp butter
25g/1 oz/¼ cup slivered almonds

Heat the oil in large frying pan and add the beef, onion and garlic and fry, stirring from time to time, until the beef is brown and the onion is tender.

Peel, core and chop the apples. Add them to the pan with all the remaining ingredients, except the almonds. Cook, uncovered, for about 20-25 minutes, stirring occasionally.

Just before serving, make the garnish by melting the butter in a small frying pan and sautéing the almonds until golden brown. Serve the Picadillo topped with the almonds and accompanied by the tortilla chips.
