Onion Soup
( Soupe À L’Oignon )

5 large onions
Oil, butter
1-1½ litres (1¾-2¼pt) stock
1 bay leaf
Salt, pepper
150ml (¼pt) dry white wine
½ French loaf
Grated cheese


Preparation time: 20 minutes
Cooking time: 25 minutes
Serves: 4


1. Peel onions, slice into thin rings and sauté in 1 x 15ml tbsp (1tbsp) oil and 1 x 15ml tbsp (1tbsp) butter until golden. Add stock, bay leaf, salt and pepper and simmer on low heat until onion is tender. Stir in white wine.

2. Slice and toast bread. Lightly butter the toast, sprinkle a thick layer of grated cheese on top and brown under the grill.

3. Pour soup into individual dishes, or into one large one. Put slices of cheese bread on each serving.

Suitable for the freezer without toasted cheese bread
