Fish With Sorrel

kg (1lb 2oz) sorrel (or nettles or spinach)
kg (1lb 2oz) fillets of cod, pollack, pike or other firm fish
1 lemon
1 sliced onion
6-8 peppercorns
Chopped fresh tarragon
200ml (7fl oz) cream or sour cream


Preparation time: 30 minutes
Cooking time: 20 minutes
Serves: 4


1. Rinse the sorrel in cold water se­veral times, shake dry.

2. Rub fish with salt and place in a saucepan with 1 x 15ml tbsp (1tbsp) melted butter. Squeeze lemon juice over and add a very little water, the onion and peppercorns. Leave on low heat until cooked.

3. Sauté the sorrel or other leaves in 1 x 15ml tbsp (1tbsp) melted butter until they begin to soften. Add 2 x 15ml tbsp (2tbsp) cooking liquor from the fish, the cream and salt to taste. Boil for a couple of minutes and add a little tarragon. Place on a hot serving dish.

4. Pour fish stock over the green base if you want it moister. Place fish slices on top. Serve with a crisp French loaf.
