Spicy Baked French Toast

This dish can be prepared the night before or several hours ahead. Be sure to cover and refrigerate it until baking time.


1 cup (250 ml) egg substitute
1 cup (250 ml) fat-free milk
1 tablespoon sugar
teaspoon ground cinnamon
teaspoon ground nutmeg
teaspoon ground allspice
teaspoon almond extract
8 slices white bread


Serves: 4


Preheat oven to 400°F (200°C). Line a baking sheet with foil and spray with vegetable cooking spray. In a shallow dish, combine egg substitute, milk, sugar, cinnamon, nutmeg, allspice and almond extract. Dip bread into mixture, turning to coat both sides; place on prepared baking sheet. Cover with foil or plastic wrap and let stand about 20 minutes. Uncover and bake about 10 minutes; turn slices over and bake another 5 minutes. Serve at once.
