Sun-Dried Tomato Meat Loaf

Turn an everyday dish into a special treat for dinner. Leftovers make equally special sandwiches.


1 pounds (675 g) lean ground beef
onion, chopped
1 celery stalk, chopped
1 egg or equivalent egg substitute
cup (60 g) quick-cooking rolled oats
2 tablespoons chili sauce
6 dry-pack sun-dried tomatoes, chopped
3 tablespoons chopped fresh parsley
green bell pepper, chopped
cup (60 ml) fat-free milk
1 teaspoon garlic powder
teaspoon black pepper


Serves: 8


Preheat oven to 350°F (175°C). Spray a 9 x 5-inch (23 x 13-cm) loaf pan with vegetable cooking spray. In a bowl, combine all ingredients; do not overmix. Form into a loaf, place in prepared pan, and bake about 1 hour. Pour off excess juices and let stand about 10 minutes before slicing.
