Marinated Flank Steak

Challenge your guests to identify the marinade ingredients!



1 teaspoon instant coffee granules
2 tablespoons hot water
1 garlic clove
teaspoon dry mustard
teaspoon dried leaf tarragon
1 tablespoon olive oil
2 tablespoons dry vermouth
2 tablespoons lemon juice
1 pound (450 g) flank steak, cut into 4 pieces
1 tablespoon cornstarch


Serves: 4


Dissolve coffee granules in hot water. Combine with remaining marinade ingredients. Place steak in a shallow baking dish and pour marinade over it. Cover and refrigerate about 3 hours. Remove steak from marinade and reserve marinade. Spray a large nonstick skillet with vegetable cooking spray. Heat skillet and pan-broil steak until cooked as desired. (Steak can also be broiled.) Dissolve cornstarch in marinade; pour into a small nonstick saucepan and simmer until thickened. Pour over steak.
