Chile Beef And Bean Burgers

Chile peppers provide extra flavor and beans extra fiber.


cup (55 g) mashed cooked pinto beans
pound (340 g) extra-lean ground beef
2 green onions, chopped
cup (55 g) chopped, peeled and roasted green chiles
1 tablespoon low-sodium catsup
teaspoon chili powder
1 teaspoon dried leaf oregano
4 English muffins or hamburger buns, split


Serves: 4


In a medium mixing bowl, combine all ingredients except English muffins and lettuce. Shape into 4 patties. Heat a large nonstick skillet. Place patties in skillet and pan-broil on each side until cooked through. (Patties can also be broiled.) Toast muffins; top with burgers and lettuce.
