Green Bean And Potato Salad

With its unexpected combination of ingredients, this is no ordinary potato salad. Top with Italian Dressing.


2 cups (300 g) green beans, cooked
1 cup (85 g) sliced fresh mushrooms
2 cups (450 g) sliced peeled cooked potatoes
cup (55 g) chopped celery
3 green onions, chopped
red bell pepper, seeded and chopped
cup (30 g) raisins
cup (30 g) corn kernels, cooked
2 tablespoons chopped capers
2 tablespoons pine nuts


Serves: 6


In a large salad bowl, combine all ingredients. Cover and refrigerate at least 4 hours. Add dressing before serving.
