Bananas Foster

4 tablespoons butter
cup light brown sugar
teaspoon ground cinnamon
6 tablespoons banana liqueur or brandy
4 large bananas, halved lengthwise and then crosswise
6 tablespoons rum
4 scoops vanilla ice cream


Melt the butter in a skillet or chafing dish. Add the sugar, cinnamon and banana liqueur or brandy and stir to dissolve the sugar, boil.

Add the bananas and cook until just soft, lightly turning occasionally.

Warm the rum in a small saucepan and pour over the bananas alight. Carefully tilt the pan to swirl the liquid around until flames die out.

Divide the bananas between four plates. Top each with a scoop of ice cream and spoon the sauce over.

Serve immediately.
