Smoked Trout Fillets With Warm Potato Salad

3 oz (100 g) smoked trout fillets
2 large firm potatoes
3 tbsp (45 ml) hot vegetable stock
1 tbsp (15 ml) grated fresh horseradish
bunch fresh chives
bunch fresh dill
2 radishes


Serves: 2


Bring lightly salted water to a boil and cook the potatoes for 20 minutes. Drain, let steam slightly, peel while still hot and slice.

Combine vegetable stock and horseradish in a medium bowl. Season with a little salt. Finely chop the chives and dill and stir them in. Mix in the Potatoes.

Slice the radishes. Arrange the trout and potatoes on two plates and garnish with radishes.

TIP:- like all types of fish, trout is rich in protein. The fat content of the delicate, sweet, nutty tasting flesh varies according to type, but no need to worry about eating and enjoying it. Fish fat is generally rich in healthful omega 3 fatty acids, otherwise found primarily in such vegetable oils as canola and flaxseed.
