Soft Fruit and Ginger Cup

Ingredients

115g/4oz/1 cup strawberries, hulled
115g/4oz/⅔ cup raspberries, hulled
50g/2oz/ cup blueberries
15ml/1 tbsp caster (superfine) sugar
90ml/6 tbsp vodka
600ml/1 pint/2 cups ginger ale
4 large scoops of orange sorbet
About 8 ice cubes
20ml/4 tsp grenadine
4 physalis, to decorate

Method

Cut the strawberries in half and put them in a bowl with the raspberries, blueberries and sugar. Pour over the vodka and toss lightly. Cover and chill for at least 30 minutes. Put the ginger ale and sorbet into a food process or blender and process until smooth. Pour into four bowl shaped glasses and add a couple of ice cubes to each glass. Spoon a teaspoon of grenadine over the ice cubes in each glass, then spoon the vodka steeped fruits on top. Decorate with the physalis and serve immediately.
