Chios Egg-Plants With Feta Cheese And Basil


4 egg-plants, medium size
6 tbsp feta cheese, hard type sliced in cubes
4 cloves garlic, crushed
2 tbsp olive oil
1 tbsp fresh basil


Serves: 4


1. Place egg-plants over charcoal or on the oven grill and cook both sides well. Pick a pointed knife and curve along egg­-plants to let the juice strain out. Mix the feta cheese cubes, parsley, garlic and olive oil in a bowl.

2. Fill the egg-plants with the stuffing from the bowl. Close egg-plants and place them on grill again for 10 minutes, or until the feta cheese melts. Serve egg-plants open as soon as you take them out of the oven.
