[Smoked Beef Cenarth With Poachers Sauce]

Ingredients

16 thin slices smoked beef
36 pickled damsons, stoned

Stuffing:

2 small onions (finely chopped)
12 oz / 375 gm button mushrooms finely chopped
2 oz / 50 gm butter
4 oz / 125 gm fresh white breadcrumbs
1 large egg beaten
2 dessertspoons chopped mixed herbs, including parsley
2 cloves garlic chopped
Salt and Pepper

Poachers Sauce:

pt / 300 ml demi-glace sauce
Juice and rind of 1 orange
1 wine glass damson vinegar
1 wine glass red wine


Method

Prepare the stuffing, lightly fry onion and mushrooms in butter. Mix with the breadcrumbs, egg, herbs and garlic, season. Spread the stuffing on each slice and place 2 damsons in the middle of each slice. Roll up and secure, put in a casserole. Make sauce by combining ingredients in a pan and heating thoroughly. Pour the sauce over the beef and cook, in an oven - 355°F 190°C Mark 4 for 30 minutes.
