Ingredients

2 lb / 1 kg piece boiling bacon
2 pt / 1 litre water
Parsley
8 oz / 225 gm potatoes (diced)
8 oz / 225 gm swede (diced)
8 oz / 225 gm onion
8 oz / 225 gm carrots
8 oz / 225 gm leeks


Method

Simmer all the ingredients except leeks and parsley for 3 hours. Add leaks and parsley ½ hour before serving. The liquor is served as soup and the remainder as main course with creamed potatoes.
