Herring In Mustard Sauce

Ingredients

Serves 6 as a first course; more as zakuska.

1 lb (450 g) herring, pickled
3 tablespoons soured cream
6 tablespoons olive oil
2 teaspoons capers, drained (reserve a few for garnish)
3 tablespoons made mustard


Method

Prepare the herring, cutting it diagonally into 1 in (2.5 cm) slices. Mix together the olive oil and mustard. Stir in the soured cream and capers, then pour the sauce over the prepared herring and chill for several hours before serving.
