Fresh Salmon Roe Caviar

1 sac fresh salmon roe
2 tablespoons salt
1 pints (900 ml) water


Place the sac of salmon roe in a sieve, then place the sieve over a large bowl. Bring the water to the boil. When it boils, add the salt. The water will foam up immediately pour the boiling water over the roe, shaking the sieve as you do so (it helps to have two people to carry out this task).

Lower the sieve into the water in the bowl, shaking it lightly from time to time. This process causes the roe to be released from the membranous sac enclosing it. With a wooden skewer, carefully separate the individual eggs.

With a slotted spoon, lift the roe from the water and place it in a jar. The caviar will keep in the refrigerator up to 1 week. If you wish to keep it longer, rinse the roe a second time with salt solution and pour a little vegetable oil over the top of the caviar in the jar.

Note:- If fresh whitefish or sturgeon roe is available, it may be substituted for the salmon.
