Pollo Con Naranjas
Orange Chicken

150 ml / pint fresh orange juice
150 ml / pint chicken stock
2 green chillies, seeded and sliced
2 tablespoons raisins
3 oranges, peeled and thinly sliced
50 g / 2 oz slivered almonds
3 oranges, peeled and thinly sliced
2 tablespoons chopped fresh coriander
1 teaspoon salt
teaspoon ground cinnamon
⅛ teaspoon ground cloves
4 chicken portions
2 tablespoons oil
1 onion, chopped
2 garlic cloves, crushed


Serves: 4


1. Mix the salt, ground cinnamon and cloves together, and then rub this Spicy mixture all over the chicken portions to flavour them.

2. Heat the oil in a large frying pan; add the chicken and fry, turning occasionally, until all the chicken pieces are browned all over. Remove them from the pan and pour off any excess fat. Keep the chicken warm.

3. Add the onion and garlic to the pan, and sauté gently until tender and golden, Return the chicken to the pan and stir in the orange juice, chicken stock, raisins and chillies. Cover the pan and simmer for 1 hour, or until the chicken is cooked and tender.

4. Add the almonds and the orange slices, and stir gently. Heat through over low heat for about 5 minutes. Serve the orange chicken sprinkled with chopped coriander.
