Orange Anise Bread

2 teaspoons (7g) dried yeast
1 teaspoon sugar
2 tablespoons warm water
1 cups (240g) semolina
1 cups (225g) plain flour
1 teaspoon salt
90g butter, melted
1 tablespoon grated orange rind
2 teaspoons ground anise
⅔ cup (160ml) water, extra
1 egg, lightly beaten
1 egg yolk
1 tablespoon sesame seeds


Makes: 3


1. Combine yeast, sugar and water in small bowl; cover, stand in warm place about 10 minutes or until frothy.

2. Sift semolina, flour and salt into large bowl, add yeast mixture, butter, rind, anise, extra water and egg, mix to a soft dough.

3. Knead dough on floured surface about 10 minutes or until smooth and elastic. Divide dough into 3 pieces, roll each piece into a ball. Place on greased oven tray; cover, stand in warm place about 1½ hours or until balls have doubled in size.

4. Flatten balls until 2cm thick, brush with egg yolk, sprinkle with seeds. Bake in moderate oven about 30 minutes or until bread is browned and sounds hollow when tapped. Cool on wire rack.

Recipe can be made a day ahead.
