50g ghee
1 cups (300g) basmati rice
3 cups (750ml) water
250g fresh dates, seeded, thinly sliced
2 teaspoons orange flower water
cup (75g) dried apricots, thinly sliced
2 tablespoons chopped fresh parsley


Serves: 6


1. Heat ghee in medium heavy-based pan, add rice, cook, stirring, until rice is coated with ghee. Add water, simmer, covered with tight-fitting lid, 12 minutes. Remove pan from heat, stand, covered, 10 minutes.

2. Stir in remaining ingredients.

Recipe best made close to serving.
Freeze: Not suitable.
Microwave: Suitable.
