Autumn Fruit Salad

Despite the name, you can make a version of this fruit salad all year round just change the fruit to suit the season.

Ingredients

25g/1 oz/2 tbsp caster sugar, plus extra to taste
Juice of 1 lemon
1 red eating apple, cored and sliced
1 green eating apple, cored and sliced
1 eating pear, peeled, cored and sliced
150ml/ pint/ cup apple or pear juice
4 plums or 6-8 sweet damsons, stoned and halved or quartered
115g/4oz fresh raspberries, blackberries, blueberries or strawberries

Method

Dissolve the sugar in the lemon juice in a large bowl. As you prepare the apples and pear, put them straight into the lemony syrup.

Pour over the apple juice, cover the bowl tightly and leave in a dark place for 2-6 hours.

A little while before serving, stir in the rest of the fruit and some more sugar to taste.
