Ingredients

1 kilo runner beans
1 tea cup virgin olive oil
2 carrots, sliced
2 potatoes, chopped
2 onions, thinly sliced
2 cloves garlic
Parsley, finely chopped
4-5 ripe tomatoes
Salt and black pepper
Sugar
Cinnamon


Method

Heat the olive oil and fry the onions and garlic until browned. Add the tomatoes, peeled and finely chopped, the potatoes, carrots, parsley, salt and pepper. Fry for five minutes. Add the beans and a cup of water. Stir and cover the pan. Cook at a low heat for an hour.
